Turkey Chili

The best thing about healthy eating is discovering all of your old favorite foods and remixing them to be more healthier! We love eating chili in this household. We have chili nights! Where the table is set with all the fixins' like sour cream, shredded cheese, Fritos, and chopped onions. Recently, we tried a healthy chili night where we substituted the ground beef in the recipe for ground turkey and added zucchini into the mix. It was a hit!



Start by cooking the ground turkey, breaking up the meat with a wooden spoon. We used 2lbs of meat.


When it's all cooked, drain the fat and add the onions and zucchini. 


Use one can of each for every pound of meat. So we used 2 cans of kidney beans and 2 cans of diced tomatoes. Pour the whole cans in! Juice and all!


My trusty chili mix.

Mix it all together with 1/2 cup of water and 1/4 cup of brown sugar. Bring to a boil and then let it simmer for as long as you can. (Minimum simmer time is about 30 minutes)




After it's been simmered for a while, everything will slowly cook down together.


Leftovers are a good addition to work lunches! And also can be frozen!
